â— Responsible for the smooth running of the kitchen operations and manage areas of profit, stock, wastage control, hygiene practices and training within the kitchen.
â— Ensure that the consistency on food preparation is adhered to company SOP to maintain its quality at the highest level at all times.
â— Oversee, control and direct outlet kitchen and central kitchen on food preparation, presentation in compliance with food health and safety regulations.
â— Train, develop and motivate kitchen staff in a conducive learning environment through constant discussion and follow up on issue arises.
â— Ensure outlets and central kitchen team to meet all regulations pertaining to sanitary and safety guidelines in accordance to regulatory requirements.
â— Pivotal role in menu development, maintaining updated and accurate costing of all dishes prepared with determined selling price.
â— Updating POS system
â— Propose yearly menu/promotion/activity planner follows by executing menu discussion, food testing, photo shooting, and providing new menu/promotion production list to purchasing team, new menu/promotion briefing and kitchen crew training.
â— Work closely with purchasing team to monitor product supplies from time to time and ensure only sufficient/quality/certified/halal products purchased for business needs.
â— Ensure all machines/equipment kept in good condition at all the time and to supervise instruction program on handling of equipment for new or re-rated crew members on handling procedures of equipment.
â— At least Degree in the field of Culinary Arts, Food Management, Food Science, Food Management, Food Technology or other relevant courses.
â— Minimum 5 years of working experience in F & B field, especially in central kitchen.
â— Deep knowledge in local cuisine comprises of Malay and Chinese rice, noodle, etc.
â— Strong knowledge of local, state and federal food sanitation regulations.
â— Excellent record of kitchen management.
â— Ability to spot and resolve problems efficiently and come out with preventive measures.
â— Can communicate in English.
â— Good interpersonal, organizational and leadership skills.
